Stuffed Potato Idly for Healthy BreakFast | South Indian stuffed Idli Recipe

Ingredients:

Note: 1cup = 250 ml

For Batter:

  • Water as needed
  • 3 cups rice
  • 1 cup split black lentils (dhuli urad dal)
  • 1 tablespoon fenugreek seeds (methi dana)
  • Salt as per your taste
  • 1 teaspoon fruit salt (Eno)

For Masala Mixture:

  • 1 cup boiled and mashed potatoes
  • ½ cup chopped tomatoes
  • ½ cup chopped onion
  • ¼ cup boiled peas
  • 1 tablespoon cooking oil
  • Salt as per your taste
  • 1 teaspoon mustard seeds
  • ½ teaspoon turmeric powder
  • ¼ teaspoon red chili powder
  • 1 teaspoon pav bhaji masala

Method:

For Batter:

  1. Wash and soak Rice, dal and fenugreek seeds for 5-6 hours or overnight.
  2. Grind the rice with some water till to the smooth paste with pouring consistency as shown in the video.
  3. Similarly grind dal and fenugreek seeds together in a mixing jar, till to the smooth paste as shown in the video.
  4. Mix both the paste together in a large bowl. Add salt and mix well.
  5. This mixture should be thick pouring consistency.

For stuffing masala mixture:

  1. Heat 1 tablespoon oil in a pan on medium flame. Add mustard seeds. When they start crackling, add chopped onion and fry them on medium heat till they become golden brown.
  2. Add chopped tomatoes and mix well. Add turmeric powder, red chili powder, salt and pavbhaji masala. And again mix them well.
  3. Cover the pan with a lid and let them cook on medium flame for 2 mintutes, till the tomatoes become cooked and soft.
  4. Add green peas and sauté for a minute. Add mashed potatoes and mix them well with tomatoes masala.
  5. If the masala become dry; Add 2 tablespoon of water and mix again for 2 minutes, till the tomatoes masala and potatoes blend with each other well.
  6. Switch off the flame and keep aside.

For making idly:

Cooking in Pressure cooker:

  1. Grease the idly plate and keep aside.
  2. Add some water in pressure cooker, water level should be below the idly plate. Heat the water on high flame.
  3. Take a small bowl, add 2 cups of idly batter and 1 teaspoon fruit salt and mix together well. Fruit salt should be added just before you are going to cook; otherwise the idly will not be fluffy.
  4. Now pour the idly better into the greased idly moulds and make sure it should be half filled to keep some space for masala.
  5. Now add half tablespoon of masala in every mould in the center of the filled batter, then again pour some idly batter upon masala, so that it completely cover the masala.
  6. Similarly fill all idly moulds.
  7. Once the cooker water gets boiled. Place idly stand inside the cooker and cover it with lid without whistle.
  8. And cook for 15 minutes for medium to high flame.
  9. After 15 minutes, verify the idly by poking tooth pick, if it comes out clean that means idlies are completely cooked.
  • Now take out idly stand from cooker and let it cool for 5 minutes. Now you can remove them with the help of knife.
  • Our soft and spongy idlies are ready to serve.

Cooking in microwave:

  1. Grease the idly plate and keep aside.
  2. Add some ½ cup of water in an idly maker. And microwave it on high tempertature for 1-2 minutes. Just to heat the water.
  3. Pour the idly batter in the moulds in the same way as mentioned above.
  4. And place the idly stand in the idly maker and cook in the microwave on high temperature for 5 minutes.
  5. Now verify the idly by poking tooth pick, if it comes out clean that means idlies are completely cooked. If not cooked then microwave them again for 1-2 minutes more or until the tooth pick comes out clean.
  6. Now take out the idly stand from cooker and let it cool for 5 minutes. Now you can remove them with the help of knife.
  7. Our soft and spongy idlies are ready to serve.
