Rajasthani Kanji Vada

Rajasthani Kanji Wada Recipe: Kanji Vada is a traditional digestive beverage by grinding the mustard grains. It is served as an appetizer before eating and even after dinner.


For Khanji

  • 2 liter water
  • 4 tablespoon mustard seed (fine powder)
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • ½ pinch asafetida (hing)
  • 2 teaspoon mustard oil
  • 2 teaspoon salt or as required

For Vada

  • 1 cup or 180 gram moong dal (soaked in water)
  • ½ teaspoon salt or as required
  • ½ pinch asafetida (hing)
  • Oil for frying

Methods: How to Make Rajasthani Kanji Wada Recipe

Methos For Khanji

  1. Take a glass or food grade plastic container. Wash it well with water and dry it in the sun.
  2. Put the mustard seeds, turmeric powder, red chili powder, asafetida, salt and mustard oil in the container. Also, add some water to it and mix all the spices for 2 to 3 minutes and mix it.
  3. After that, add whole water to it and mix it. Close the jar and place it in a hot place and stir it with a spoon daily. After 3 days, the kanji will be well prepared after being sour.
  4. Kanji is ready after 3 days.

Methos For Vada

  1. Soak the lentils thoroughly and soak it in water for 2 to 3 hours. Afterwards, remove excess water from it. Add lentils in a mixer jar and grind it lightly. Take out the beaten lentils in a bowl. Grind the remaining lentils as well. When mixing pulse, add salt and asafetida to it.
  2. Beat lentils for 4 to 5 minutes thoroughly.
  3. The lentils will appear bloated after beating. Heat the oil in the deep pan to make the Vada. When the oil is hot. Break a few vada and put them in a pan and fry until the Vada are golden brown.
  4. Take out the deep fried vadas in the plate. Prepare all the vadas in such a way.
  5. Add these vadas s in Kanji and mix them in Kanji well and let them remain in Kanji for half an hour. After half an hour, Rajasthani Kanji Vada Recipe is ready. To serve them, put 3 to 4 vada and Kanji in a glass. 


  1. You can take food grade plastic or glass utensils for Kanji.
  2. If you are not using water, then boil the water first, cool down and then mix it with spices.
  3. Grind the lentils without water only.
  4. If you have not made Vada, then Kanji can serve with 1 to 2 teaspoons Bundi.
