How to make Mix Veg Diwani Handi Recipe at Home

Veg Diwani Handi Recipe – Made from the combination of a variety of fresh vegetables, with a unique flavor Mix Veg Diwani Handi. 

Ingredients:

  • 1 capsicum
  • 2 parval
  • 5 baby corn
  • 1 cup cauliflower
  • 2 Potatoes
  • 4 tomatoes
  • ½ inch ginger
  • 2 green chilli
  • 2-3 tablespoon oil
  • 1 tablespoon cream
  • 2-3 tablespoon green coriander leaves, finely chopped
  • ¼ teaspoon cumin seeds
  • ½ teaspoon coriander powder
  • ½ teaspoon red chilly powder
  • 1 black cardamom
  • 1 cloves (lavang)
  • 1 inch cinnamon
  • 6-7 Black pepper corn
  • 1 teaspoon salt or as required

Method: How to make Mix Veg Diwani Handi Recipe at Home

  1. Wash the vegetables well and dry them until dry. Cut the cauliflower and take it. Cut the baby corn into ½ to 3/4 inch pieces. Cut the capsicum and remove the seeds and cut it into half inch pieces. Peel the parval and cut it into pieces. Peel the potatoes and wash it and cut it into half inch pieces.
  2. Add oil to the pan and heat it. When the oil is hot, add cumin seeds and fry them lightly. When all the cumin seeds are cooked, add all the vegetables and add 1/2 tsp salt and mix them and let the vegetables cook a little over the low flame. Keep checking the vegetable in the middle.
  3. After 5 minutes, remove the lid of the pan and check it, if the vegetables are not cooked. Cover the pan again and cook the vegetables for another 5 minutes.
  4. After 5 minutes check the vegetable. if the vegetable is cooked, shut the gas.
  5. Peel the cardamom and take out its seeds and crush it carefully. After this, grind tomatoes, ginger and green chillies and prepare the paste.
  6. Take another pan. Heat 2 tablespoons of oil in it. When the oil is hot, add the whole spices and fry it lightly. Put tomato-ginger green chilli paste in the spice. Along with this, add turmeric powder, coriander powder, red chilli powder and finely chopped pieces of ginger, and mix them. Roast the spices on medium flame until the spices begin to leave the oil.
  7. After frying the masala, add 1 cup of water, garam masala and 1/2 small spoon of salt and a little bit of coriander and mix it. Mix the cooked vegetables in a spice and mix it well. Put the cream in the vegetable and cook it continuously until it gets boiled in the vegetable.
  8. When the vegetable is boiled, cover the vegetable and let it cook for 5-6 minutes on low flame so that all the spices are absorbed in the vegetable.
  9. After 6 minutes, the Mix Veg Diwani Handi is ready, take out the vegetable in the bowl. Arrange this tasty mix with a little bit of green coriander and ginger pieces on the Mix Veg Diwani Handi. Serve and eat hot mix veg handi with paratha, naan, chapati or rice.
  10. Sufficient for 4-5 members.
