Matar Paratha Recipe: Stuffed paratha seems more tasty than normal parathas. You will surely like the taste of the green pea Stuffed Parantha.

Servings: 4

Ingredients:

Note: 1 Cup = 250 ml

For Making Dough:

  • 1 cup whole wheat flour (Ata)
  • 1-2 teaspoon Ghee or oil
  • Salt as per your taste
  • Water for making dough

For Peas Filling:

  • 1 cup green peas (Hari Matar)
  • 1 green chilly
  • 2 tables spoon chopped coriander leaves
  • ¼ teaspoon red chili powder (Optional)
  • ¼ teaspoon cumin seeds (Jeera)
  • 1/4th teaspoon dry mango powder (amchur)
  • A pinch of garam masala
  • A pinch of asafoetida (heeng)
  • Salt as per your taste
  • 2 teaspoon oil for frying

Methods:

For Making Dough:

  1. Take a large bowl; add 1 cup ata, 1-2 teaspoon ghee, and salt. Mix altogether.
  2. Add water slowly and make a soft dough, and keep aside.

For Peas Filling:

  1. Half boiled the green peas and let them cool. Then crush them with the help of masher or you can also crush them in a mixer jar.
  2. Put a pan on medium to high flame and add oil and let it heat. Add heeng, jeera and green chilly. Saute for a min.
  3. Add crushed green peas and now add all rest of the dry spices including salt and coriander leaves.
  4. Let it cook and sauté for 2 minutes; then switched off the flame. Matar Filling is ready.

For making Paratha:

  1. Pinch a ball of dough as the medium size of a lemon. Roll and flatten it with hands, then dust it with some flour and start rolling it in a circle. Make a small circle of 5 inches.
  2. Put some peas filling in the center of the rolled dough. Now pull up the edges of the rolled dough by wrapping the potato filling and make a round ball.
  3. Now repeat the dusting and rolling process until you get the desired size of paratha.

Frying Paratha:

  1. Heat an iron tava on the medium to high flame. place the rolled paratha on the pan.
  2. When you notice paratha changes its color and slightly puff up and check golden spots can be seen on the tava side, then flip the paratha and then apply some oil evenly on it, then again flip the paratha and again apply some oil on the other side in the same way.
  3. Now press the paratha with a spatula by flipping both the side and making sure the paratha is golden brown on both the side.
  4. Now paratha is ready and you can serve it with some pickle & chutney or curd.
