Ingredients:

For French fry:

  • 250 g lady finger (bhindi)
  • 1 teaspoon lemon juice (neebu)
  • ½ teaspoon salt (namak)
  • ¼ teaspoon red chili powder (lal mirch powder)
  • 2 table spoon gram flour (besan)
  • ½ teaspoon cumin powder (jeera powder)
  • ½ teaspoon coriander powder (dhaniya powder)
  • ¼ teaspoon turmeric powder (haldi)
  • 2 table spoon gram flour (besan)
  • ½ teaspoon chaat masala
  • Oil to fry

Methods:

For masaledar kurkuri bhindi (spicy crispy fried lady finger):

  1. Wash Bhindi well and keep it in sieve, dry till all the water is dry. Now, take a bhindi, cut the stalks forward and backward, cut the bhindi into two parts in length and now cut the length of one part into thin, making thin 3-4 pieces, and remove the seeds of bhindi.
  2. Transfer the chopped bhindi in a big bowl. Now add salt and lemon juice to it and mix it well. Now add red chili powder, cumin powder, coriander powder, turmeric powder and gram flour to Bhindi, until the spices are coated nicely.
  3. Heat oil in a pan and heat it, when the oil is heated, put as many as bhindi possible in the pan. And fry it on high flame until the bhindi appear light brown and crispy. Fried bhindi is ready. Take out the plate. Prepare all the Bhindi in such a way.
  4. Add a little bit of masala to make crispy bhindi more delicious. Masaledar kurkuri bhindi is ready to eat. Serve crispy lady finger with food or eat it as a snack.
  5. Store it in a air tight container for up to 2-3 days.

Tips:

  • The oil to fry bhindi should be well heated for frying. Pour Bhindi to the frying pan in the hot oil, slow down the, and fry it on low flame till it crisps.
